HWL Ebsworth’s Sydney Property team acted for the Fink Group in successfully renegotiating the new long-term lease arrangements for Quay Restaurant.
Martin Downing and Rachel Gregson negotiated the lease, and agreement for lease, with Sydney Ports for the $4 million up-grade of Quay. The negotiation of the new 20 year lease proved challenging and required a particularly innovative approach to be taken due to a mixed title (part seabed title and part Port’s title) and complications arising from the restaurants proximity to the Overseas Passenger Terminal, which is the main Sydney cruise ship port and a State entertainment precinct.
Quay is the flagship restaurant in the Fink fleet and is one of the top 50 restaurants in the world. The restaurant was successfully re-launched mid July with great fanfare and a brand new menu from Peter Gilmore – the Snow Egg is no more!
